If you never tried grilling lamb chops before, here’s your chance to make it happen! I make baked lamb chops and air fryer lamb chops for most of the year, but when the warm summer months roll around, nothing beats a great grilled lamb chops recipe in the summer. This one makes perfect tender and flavorful meat with a hint of char. Ingredients You’ll Need

This section explains how to choose the best ingredients for grilling lamb chops, what each one does in the recipe, and substitution options. For measurements, see the recipe card below.

Choosing Lamb Chops:

  • Lamb Loin Chops – Similar to a T-bone steak in appearance, with lean and tender meat.
  • Shoulder Chops – Also known as blade chops or arm chops. These are thinner and wider, with more connective tissue and fat than other chops.
  • Rib Chops – These chops are cut from a rack of lamb and often have the narrow end of the bone cleaned, which is what I did.

This recipe uses lamb rib chops, but the marinade will work with any of these cuts of lamb. Lamb loin chops and shoulder chops will take longer to grill, though.

Grilled Lamb Chops Marinade:

  • Olive Oil – I used extra virgin olive oil, but you can use any neutral oil you like.
  • Lemon Juice – The acid helps tenderize the meat. Use fresh squeezed for the best flavor, but bottled will work fine. If you want to change it up, use balsamic vinegar instead.
  • Garlic – You’ll need fresh garlic cloves, since we’ll be using it crushed.
  • Fresh Herbs – I used mint, parsley, and dill for all the summer vibes. But if you make this dish in the fall, fresh rosemary and thyme work nicely. You’ll need 3 tablespoons of fresh herbs total and any combination you like is fine to use.

How To Grill Lamb Chops

  1. Marinate. Mix all lab chop grill marinade ingredients together in a large bowl: olive oil, lemon juice, crushed garlic, fresh herbs, salt, and pepper. Add lamb chops and turn to coat, then cover.

TIP: How long to marinate?

Marinate chops at room temperature for 30-60 minutes, or as long as overnight. If marinating for longer than 60 minutes, refrigerate the chops and allow to come to room temperature before proceeding.

  1. Grill. Preheat the grill (or a grill pan) to medium-high heat. (This typically takes 10-15 minutes for an outdoor grill or 2-3 minutes for a grill pan, and is important to get a nice sear.) Grill lamb chops for a few minutes per side to desired doneness (see cooking times below).

  1. Rest. Transfer chops to a plate and tent with foil. Rest for 5 minutes before serving.

TIP: Don’t skip resting time.

Lamb chops will stay juicy if allowed time to rest. Their temperature will also rise an additional 5-10 degrees during this stage.

How Long To Grill Lamb Chops?

The cooking time for chops depends on the doneness level you want. Use this time chart as a guide:

The temperatures above are when you’ll remove the lamb chops from the grill — the temp will rise about 5 degrees while resting. Always use a meat thermometer to ensure proper doneness.

TIP: Recommended doneness for grilled lamb chops is medium-rare to medium.

Grilling them to medium well or well done may make them taste gamey.

Storage Instructions

  • Store: Wrap chops tightly and store for 3-4 days in the refrigerator.
  • Meal prep: Prepare and marinate the chops up to 24 hours ahead of time, or simply make the marinade and refrigerate until ready to use with the meat.
  • Reheat: Heat chops gently in a warm oven or skillet.
  • Freeze: Wrap tightly and store in a freezer-safe container for 2-3 months, and thaw overnight before serving. Although you can safely freeze them, chops may be more dry after thawing and reheating.

  1. In a large bowl, whisk together the lamb chop marinade ingredients: olive oil, lemon juice, crushed garlic, fresh herbs, salt, and pepper.

  2. Add the lamb chops. Turn them to coat in marinade and press the marinade into the chops. Cover with plastic and marinate at room temperature for 30-60 minutes. (Alternatively, marinate in the refrigerator for a few hours or overnight, but let lamb chops sit at room temperature for 30 minutes before cooking.)

  3. Preheat the grill to medium-high heat (400 to 450 degrees F (204 to 232 degrees C).

  4. Cook lamb chops on the grill for 1-3 minutes per side for medium rare, 2-4 minutes per side for medium, or 3-5 minutes per side for medium well. For best results, check using a meat thermometer: 130 degrees for medium rare, 140 degrees for medium, or 150 degrees for medium well.

  5. Remove lamb chops from the grill and transfer to a plate. Tent with foil and rest for 5 minutes before serving. (Internal temperature will rise an additional 5-10 degrees.)
