The Versatile Air Fryer

Do you have an air fryer? If not, you definitely should!

These appliances are so versatile because they can cook anything you can cook in a conventional oven–as long as it can fit and it cooks about 30% quicker than a conventional oven. The reason for this is an air fryer is really only a small but super-powerful convection oven.

I believe it was named “air fryer” because that name is a lot more catchy than “super convection oven.” It leads you to believe that it can replace a deep fryer. In my opinion, that answer is no. However, you can get credible crispiness cooking in it and make things that mimic deep fried food just like these fritters.

Based On Two-Ingredient Dough

Remember last-year’s fad with the 2-ingredient dough creations? This is based on that, although you have to add a couple of ingredients to it. One ingredient is optional although I highly recommend using it since it will help browning in these fritters.

The idea for this recipe came from a very inventive cook in one of my air fryer groups. Her recipe had several more ingredients than mine does; I merely streamlined hers and added a touch of sugar to the dough (that’s my optional ingredient).

As with most air frying, you have to spray these with some vegetable oil. This aids browning too and the little oil will make the fritters crunchier and give it that almost-fried flavor. However, it’s much less oil than you’d use with deep frying. Again, I highly recommend you spray them with oil. Otherwise they may be overly sweet from the glaze and the flavors won’t meld. This is the oil sprayer I use. Don’t be tempted to use non-stick spray. It won’t work and it will louse up the basket of your fryer.

Parchment?

I generally don’t use those parchment rounds that many use in air fryer baskets. For cooking meat and poultry, I find them useless to be honest. However, when it comes to baking right in the basket like you do with this recipe, they are a godsend. Mine stuck a little bit even to the parchment, but I was able to turn them without destroying the fritter because I used the parchment. The lady who originally made this said to use them and I totally see why she did. I get my parchment rounds from Amazon. They’re cheap so they won’t break the bank.

Ingredients

Fritters

  • 1 cup self-rising flour
  • 1 cup plain Greek yogurt
  • 2 tsp sugar optional
  • 1 tbs cinnamon
  • 1 large apple peeled and chopped

Glaze

  • 1 cup confectioners sugar
  • 2 tbs milk or more, if needed

Instructions

  • Mix all fritter ingredients together in a medium bowl. Knead the mixture in the bowl about 3-4 times.

  • Mix glaze ingredients together—this mixture should be on the thin side. Set aside.

  • Line the bottom of the air fryer with a parchment round. Spray the parchment liberally with oil (NOT non-stick spray).

  • Divide the fritter batter into 4 balls about the size of a handball. Flatten slightly and place in the fryer basket. Spray with vegetable oil.

  • Air fry at 370 degrees F for 13-15 minutes, turning half way through the cooking. Spray with oil again after turning. Check for doneness with a toothpick.

  • Drizzle or dip in the glaze then place fritters on a wire rack to cool and dry the glaze.

  • Recipe can be doubled if you want more than 4-5 fritters.

    This recipe sounds incredible but I.am allergic to dairy. Do you have a substitute for the yogurt? Would almond yogurt work? I thought I could substitute almond milk for the glaze but wasn’t sure if chemically milk v.s.almond yogurt were the same. Also, do you have a favorite apple you use? Thanks for your help!

      If you can get a Greek-style yogurt that’s non dairy, it would probably work. I’m not sure if regular-style yogurts would in this. Greek yogurt is often substituted for sour cream so if there is a non-dairy version of sour cream, I guess you’d be OK with that. Funny but the lady who originally made these used almond milk in the glaze so that will work.I used macintosh in these but granny smiths would work too.

    Thank you. I love these.I read this recipe many times and I missed “Greek” yogurt. I used plain regular yogurt. I couldn’t knead it but I put four globs in the basket with oil on top. Also, I put the parchment paper in the bottom of the fryer not the basket although I oiled the top and bottom of the basket. After 8 minutes on one side which I did put a lot of avocado oil on, I realized I should have put the fritters on the paper. I have two air fryers so I put the parchment paper in the other basket then the fritters and oiled them on this side. After another 6 minutes they were done. I only used 1/2 c of confectioners sugar for the glaze. They were crispy. The apples were perfect. I will make them again. I want to eat the other two but I will try to leave them for my son. I love my air fryers. Thank you again for this recipe.

      These are so easy, you can enjoy them daily!!! I’m glad to hear that regular yogurt worked out well. It doesn’t really matter if you can’t knead them–dropping works just as well. I do that all the time for regular donuts. Next I’m going to try these with a prepared apple pie filling (I’ll cut the apples really fine or food process them) to see if that works because then you don’t have to have fresh apples on hand.

    Well, we just ried these and did they turn out as in the video? Not so much! Prepared the dough as shown in the video as well as the recipe, to the “t”. The dough turned out so-o-o-o sticky as to be unmanagable. we added some flour to stiffen things up a bit. Sprayed oil on them and cooked as directed on parchment paper, 7 minutes on one side, re-oiled and cooked for 6-7 minutes more. They looked like large tan biscuits. But we forged on. Applied the glaze and took a bite.
    They tasted ok, but needed a bit more sweetness as well as apples. If we try them again, they will be flattened out more than what we did in the first go-around.
    As for the picture? Not even close. Disappointed in the results.

      The dough is supposed to be sticky. You can add more sugar and apple if you wish. Technically, they are a large biscuit. The gal who makes my videos got the same results as I did, so I can’t figure out how come yours differed so radically.

    Fantastic recipe! I just made a batch substituting Greek yogurt with Kite Hill plain almond milk yogurt. The apples work wonders for controlling the moisture of the doughnut. Thank you for sharing such a wonderful recipe!

    I just made these for the first time. I am on Weight Watchers and just reading the ingredients I figured it would be low in points. I was right only 4 sp for 1 fritter with no glaze. The only issue I had was that trying to knead them they were a little sticky. I just added a little more of the flour a little at a time till it reached a dough like consistence. Thank you for sharing this recipe. It is now saved and I will make them again. I have already shared the recipe with family members.

      The dough is pretty sticky! I am glad that they work so well for your diet too! I’m not familiar with the “new” WW, but have you tried substituting low or no-fat Greek yogurt?

      I too am on WW. Instead of sugar, use Splenda or other similar sweetener. That will put you down to 3SPs or fritter. Add 1 SO if you glaze it but keep it at 3 with just a dusting of powdered sugar. 🙂
