Chic! From 9 June, with the reopening of the restaurants, we will be able to (re)sit down to dinner in our favourite venues and even discover new ones. Original places, innovative concepts, inventive chefs... New addresses are on the menu for this long-awaited culinary season. And they taste great! Here's a small but tempting selection to get our taste buds back into action.

La Halle aux grains, the most inspired

From 10 June, Michel and Sébastien Bras, father and son, cooks as well as poets of the land, will put their grain of salt and culinary genius into the Halle aux grains, the restaurant-café of the Bourse de Commerce. On the third level of the building, designed by architect Tadao Ando to house the Pinault collection, it will offer an interior view of the heart of the building and the vast rotunda, as well as the surrounding city, from the Saint-Eustache church to the Pompidou Centre. The two inspired chefs will put grains, seeds, seeds from all countries and all families, legumes, cereals, oleaginous plants, umbellifers... in all their tasty states. "Whether sprouted, grilled, blown, infused or fermented, they will be the impetus for a cuisine of its time, with a singular, healthy and simple expression that speaks to the soul and the body*, according to Michel Bras!

Pedzouille la Grange, the most perched

It's a high-altitude inn, a rooftop restaurant, a barn perched high on the roof of the Novotel Porte de Versailles with a breathtaking view of the Eiffel Tower... After Pedzouille La Basse-Cour in the 2nd arrondissem*nt and Pedzouille L'Etable métro Poissonnière, here is the third gourmet larronne of the collective that defends farmers in the city. The locavore table has arrived in the 15th arrondissem*nt and promises to be a new spot popular with lovers of good humour and tasty farm and local produce, a restaurant that "is lived before it is eaten". A good programme!

The restaurant of the Hôtel de la Marine, the most prestigious

Can one dream of a more exceptional setting than the Hôtel de la Marine? An emblematic monument on the Place de la Concorde, this superb 18th century architectural ensemble housed the Garde-Meuble de la Couronne until 1798, before becoming the headquarters of the Ministry of the Navy for more than 200 years, and is set to become one of the most visited places in Paris. To the north of the Cour d'Honneur is the setting for "Mimosa", the new restaurant of the Hôtel de la Marine, whose menu has been entrusted to chef Jean-François Piège. To the south, Le Café Lapérouse is a café, wine cellar, chocolatier and ice cream parlour. In these places, with a scenography in harmony with the historical heritage, the French art of living will be celebrated with panache.

Douze, le plus XXL

This is a very successful conversion of a former military barracks in the 12th arrondissem*nt, a stone's throw from the Reuilly-Diderot eco-district. On 1000 m2, a new XXL market hall is taking its place like a large larder, combining gourmet food and fresh produce. Fresh produce, cheese, fish, butcher, wine, etc. A dozen regional craftsmen and producers, each a master of their own trade, have set up their stalls there. The restaurant on the first floor gets its supplies directly from there. Its chef, Pablo Jacob, formerly of the Bel Ordinaire on the left bank, has opted for simple recipes for seasonal dishes to be shared in a convivial atmosphere. The large open kitchen, as well as the large platters of cheeses and pastries, are sure to make your mouth water. In fine weather, the terrace with a view of the garden is the delicious icing on the cake.

Brasserie Dubillot, la plus conviviale

Notice to bon vivants who like company (even from a distance) and French cuisine inspired by the land, free and inventive. From now until July, the Brasserie Dubillot (170 seats inside, about thirty on the terrace) is taking up residence in the heart of the popular Paname, in the picturesque Sentier district. In this cheerful landmark, art de vivre and bon franquette promise to coexist without fuss. In the kitchen, there are huge pieces of meat, cooked over a wood fire, to be shared as well as classics as we like them: roast suckling pig or generous sea bass in a salt crust... Not forgetting the typical brasserie dishes and the vegetarian plates, all 100% home-made and seasonal. For good food, Dubillot obviously works with brewers and winegrowers from behind the scenes.

Forest, the trendiest

A young, up-and-coming chef in the kitchen and in charge of co*cktails, and a DJ with a flair for all things turntable... The duo Julien Sebbag and Dorion Fiszel are sure to wake up the 16th arrondissem*nt by opening Forest, just opposite the Palais de Tokyo, in the heart of the Paris Museum of Modern Art. With its trendy setting, mineral decor and immersive shows of living frescoes on the concrete walls, there will be entertainment and not just on the plates. The man who has already wowed the whole of Paris with his two addresses, Créatures and Tortuga, at the top of the Galeries Lafayette, should delight with detonating plant and marine creations, like his co*cktails that are "natural, instinctive and raw". We can't wait!

Petit Plisson,the most "les pieds dans l’herbe"

Is it still necessary to present the Maison Plisson, a success story of the Parisian delicatessen? By spreading her restaurants "like at home", Delphine Plisson happily promotes a French, family and generous cuisine. This is what you will find at the kiosk-resto of Le Petit Plisson, which has set up its suitcases, its jars and its small, good, seasonal dishes in the heart of Paris, in the Tuileries Gardens. All you have to do is choose one of the 240 seats, on the terrace, with your feet in the grass, and enjoy the daily entertainment. Petit Plisson is a place to live, with yoga classes, literary co*cktails, meetings with personalities, a large farmers' market every weekend and a puppet theatre for young and old alike.

Ischia, the most Italian

The very media-friendly chef and pastry chef Cyril Lignac always has more than one project in his bag. The latest one will take him to Italy, to the island of Ischia, off the coast of Naples, from 1 July. Already at the helm of Chardenoux and Aux Prés in the 11th and 6th arrondissem*nts, the favourite chef of French gourmets suggests that you settle down there, preferably on the beautiful terrace, a stone's throw from the Javel metro station. Here, there is no trattoria folklore, but racy design made in Italy, a refined atmosphere for tasting piano piano flavours from the Botte, relaxation and the Italian art of living.

Cheval Blanc, the most gastronomic

In this hotel located in the heart of La Samaritaine, a former department stores' and Art Deco jewel, an exceptional restaurant offer was needed. If the secret is still well kept (we know neither the number of covers nor the name of the restaurant), we already know that the gastronomic table of the Cheval Blanc hotel, where Arnaud Donckele, the 3-star chef of the Vague d'Or in Saint-Tropez, will officiate, as well as the brasserie, next to the famous panoramic terrace, will reveal a breathtaking view of the Seine and the most beautiful monuments of Paris. Maxime Frédéric, former pastry chef of the Four Season George V, will also be part of the event. We give them carte blanche with our eyes closed!
